I don't even like eggplant. Eggplant doesn't taste good unless it's rolled in italian breadcrumbs, fried in olive oil, and smothered in a nice marinara sauce. In which case, why not just make chicken parmesan?
I think eggplants are beautiful. Their color is gorgeous. Aubergine...it even sounds gorgerous!
I grow it every year, thinking I'll figure out a way to cook it that's good. So far, not.
PS: Actually, I'm not much of an adventurous cook. But I'd like to be. Maybe next year.
